Default I just don't get it!!!

My fishless cycle is JUST now coming to a close after a couple months. My nitrites are coming down. At the beginning, I tested the PH daily but stopped after a while. Now that I'm near the end...I'm starting again. The other day it all of a sudden shot down from 7.8 to below 6.0....????? What could have happened? I Tested for hardness and everyone said it should be fine and stable. Could 1 java fern and one small Anubis plant do it or could it be from having a very very high content of nitrates?

Should I change the water out before the cycles done and keep testing the PH again?

Are the ammonia nitrites and nitrates still inline to your cycle or have they gone to zero also?

The ammonia is 0.5 and nitrites are 0...Nitrates are off the chart, very high
